- The "World's Largest Pancake Breakfast" is returning to Main Street in Downtown Springfield on Saturday, May 17th. The breakfast table will run from Tower Square to Court Square.

The Worlds Largest Pancake Breakfast is a great way to meet neighbors and friends as the community sits down at Springfields breakfast table in celebration of the citys May 14, 1636 founding. The menu includes hot hearty IHOP pancakes, coffee, juice and milk, and lots of local talent.
HISTORY
In 1976, Springfield was celebrating the countrys bicentennial and decided to throw a breakfast on Main Street. Ten years later, when the city was celebrating its 350th anniversary, another breakfast bash was thrown and there began the friendly competition with Battle Creek, Michigan, the self-proclaimed Cereal Capital.
Each year, the two communities battled it out for the Worlds Largest Breakfast title. First, the focus was on the length of the breakfast table. Springfield set-up a table stretching 2,500 feet on which they dished out 24,000 servings. A month later, the folks in Battle Creek out did the Springfield breakfast by 200 feet of table and 26,787 servings.
In 1987, Springfield switched to cereal and out did Battle Creek with a 3,700- foot table and 27,067 servings of cereal. The table stretched ten city blocks down Main Street, from Gridiron Street to Union Street. Before the Breakfast Bowl trophy could be engraved, Battle Creek assembled their own 3,700 foot table and served 30,413 servings. Springfield claimed fowl for their competitors table was not in a straight line. From then on, the table got shorter and the focus was on servings until recent years when Battle Creek decided not to release the number of bowls they dished out.
The “World’s Largest Pancake Breakfast” made the move from Main Street to the Eastfield Mall parking lot in 2005 and 2006. The cooking tents and two entertainment areas were strategically placed and then surrounded by volunteers serving coffee, milk and juice. After the hot and hearty breakfast, participants moved in doors for shopping, movies and more.
With the support of the Springfield Business Improvement District and the Sheraton Springfield, the "World's Largest Pancake Breakfast" will to Main Street in Downtown Springfield in 2007. The Springfield Business Improvement District has committed their support through 2009.
COMMUNITY & CORPORATE SUPPORT
Together with volunteers, corporate support and the Massachusetts Army National Guard, the Spirit of Springfield is able to present the annual flapjack feast.
The day before the breakfast, IHOP chefs oversee batter preparation at Mercy Medical Center. They work to fill 200 five-gallon buckets full of pancake batter. All the while, Taylor Rental is packing up trailer loads with tents, tables and chairs in preperation for a busy morning of set-up.
In the early morning hours on the day of the event, the Massachusetts Army National Guard report for duty. The first order of business is to transport the IHOP batter and Cabot Creamery butter on to two H. P. Hood refrigerator trucks which have already been loaded with milk, juice and creamer. Next, they distribute the paper products to the cooking tents and the beverage stations dotting Main Street.
As the volunteers arrive, some time between 6AM and 7AM depending upon their responsibility, the first batch of Green Mountain Coffee Roasters coffee brewed by the Hampden County Sheriff’s Department is en route to Main Street.
The Spirit of Springfield receives additional product donations and support from Mercy Medical Center which prints the 65,000 free tickets and fliers distributed to area students.
It is, however, the volunteers that complete the Spirit of Springfield’s recipe for a perfect pancake breakfast. They cook, serve, sell tickets and keep the table tidy. Organizations assisting in the event are ABC40, Armoury Quadrangle Civic Association, CBS3-Springfield, Clear Channel’s KIX 97.9FM, Girl Scouts of Central & Western Massachusetts, John Boyle O'Reilly Club, SATCO (PVTA), Springfield Code Enforcement, Springfield Health & Human Services Department, Springfield Rotary Club, Springfield Law Department, Springfield UNICO, United States Postal Service, WMAS AM & FM and Zonta.
RECIPE
Buttermilk Pancakes
3,450 Pounds Buttermilk Flour
800 Pounds Eggs
350 Pounds Butter
450 Gallons Water
Mix all ingredients. For best results, use 39 grills.
Top with 4,700 pounds of butter, 450 gallons of maple syrup. Serve with 200 gallons of freshly brewed coffee, 700 gallons of juice and 700 gallons of milk.
